Apple Cranberry Wonton Cups
Pam cooking spray
1 Pkg. Wonton Wrappers (refrigerated)
1/4 cup butter or margarine, melted
4 medium Lady Alice Apples
1 Tbsp. Lemon Juice (optional)3/4 cup Sugar
2 Tbsp. Flour1/2 tsp. Cinnamon
1/8 tsp. Nutmeg1/2 cup Dried Cranberries
Powdered Sugar (optional)Preheat oven to 350° , lightly spray a mini muﬃn pan with Pam or other cooking spray. Melt butter and brush on one side of the wonton wrappers fitting them into the muﬃn cup, butter side up. Place in 350° oven for 10 minutes or until lightly browned. Take out of muﬃn pan and cool on cooling rack, once cool place wontons back in pan for filling.
Peel and core apples, cut into quarters and dice into 1/2 inch cubes, place in sturdy cooking pan on stove top, mix in lemon juice to retain color, sugar, cinnamon and nutmeg. Bring slowly to a boil, stirring occasionally. Once boiling add cranberries, boil about 5 minutes, then stir in flour. Stir constantly until mixture has thickened. Carefully pour boiling mixture evenly into wonton cups. Return to oven for another 15 minutes.
Remove from oven, cool slightly. Serve. Sprinkle with powdered sugar if desired. Makes 30
